Roasted sweet potato, lentil salad with feta and spiced pumpkin seeds

Salads! Not really my cup of tea. At least not the leafy green Dutch versions I got to know as a kid. Made of lettuce and variety of toppings such as tomatoes, paprika, sweet corn of cucumber, raw onion and croutons, dressed with a vinaigrette or a creamy mayo dressing. Yuk, cold shivers are running down my spine by just thinking of it.

Creamy Roasted Tomato Sweet Pepper soup

Autumn is finally kicking in. And that means lots of warm, filling and hearty dishes. And in my book that means stewy meals and chuncky nutritious salads with, say, root veg and mushrooms. But most of all soups, yes! Nourishing and thick or brothy and filled with delicious ingredients. So when my mum asked me to make an simple birthday dinner for my father (who turned a whopping 70 years!!!) I turned to soup. Due to some family circumstances we didn’t feel like having a huge party but nonetheless such a respectable age can’t go without a little of a celebration.

Some wisdom and Scrumptious Banana Breakfast Pancakes

It’s been going back and forth in my mind in the past few weeks, months even. English, Dutch, English, Dutch. Should I switch the language of my blog to English or not? And still the dilemma is a bit unsettled. As I am a perfectionist I really do think that my blog should be entirely in English then ( I guess, I have some translating to do!). But as I am going through some serious transitions on personal, professional and most definitely on a food and health level, I might as well take the plunge to write in English.

So I did it!!! Yessssssssss! Whoop, whoop!

I’ve finally made the decision and it feels good already.
